Ingredients

125g unsalted butter, softened
125g caster sugar
2 eggs
1/4 cup plus 2 tsp cocoa powder, sifted
125g self raising flour
1/2 cup sour cream
1/4 tsp salt
1 tsp vanilla

Directions

Grease an 8 hole mini loaf pan and pre heat the oven to 170 degrees Celsius.
Place the butter in the bowl of an electric mixer and beat on a medium speed until light and fluffy.
Add the sugar and beat until combined. Add the eggs, one at a time, while continuing to mix.
Add the vanilla, sugar and cocoa on a low speed.
Fold through the flour, then the sour cream.
Divide batter evenly over the greased pan and bake for 20-25 minutes or until cooked through.
Allow the cakes to cool, turn them upside down, then pipe with your favourite buttercream recipe (I used Italian meringue) with a range of small piping tips.

Please don’t laugh at my attempt at buttercream roses! The pain I feel for not being able to join the ranks of everyone else on the internet right now is deep. So deep. There were long-winded fantasies of topping off these cute little cakes with an array lovingly piped buttercream flowers. I even had plans of starting a youtube channel on the side, but what I very quickly learned was that I am not good at them. Seven days later, I am still finding buttercream in weird places in my kitchen.

I compromised and decided to instead use almost every piping tip known to my kitchen and piped away to make these garden/reef looking cakes. Sure, it took about an hour to make/colour/pipe each cake, but these cakes are worth it! They’re rich and moist and the perfect afternoon tea pick me up size to bring you out of that weird busyness and sadness of term two {or is that just me?}.

I made these cakes by adapting my favourite pound cake recipe to include delicious Straight Up Cocoa from Grounded Pleasures. I had followed Grounded Pleasures on instagram for a long time before meeting the beautiful Sophie at Local is Lovely last year. It is always so exciting to meet passionate small business owners, especially those that put such love and care into their product. Um, foil lettering. Be still my heart.

She has been so generous, sharing lots of her drinking chocolate, panela sugar and cocoa with me over the last year. I basically lived off the Mint Hot Chocolate last winter. So, when she wanted me to come up with a recipe with their Straight Up Cocoa, the answer was a big fat yes!  

These simple mini chocolate pound cakes really allow for the rich cocoa flavour to shine. The recipe could be easily baked into one large loaf or even cupcakes. What I love most about it is no need for melting chocolate, because who has time for that when theres buttercream roses to be piped?
